To understand the possible severity of this disease, it helps to know what happens in the body of those who have it when they come into contact with gluten. When this disease sufferer consumes or comes into contact with gluten, their immune system starts to work against them. It does so by tearing down or annihilating villi, which are small, finger-like protrusions that line the small intestine.

They lack awareness that symptoms such as fatigue, bone and joint pain, headaches, and skin rashes are common in Celiac. Most are also unaware that it is associated with other autoimmune conditions like thyroid disease, diabetes, rheumatoid arthritis and lupus.

Several blood tests exist for Celiac disease. They have varying degrees of accuracy. Some are more sensitive, meaning they will be positive in milder forms of the disease but are not specific, meaning a positive test may not indicate Celiac disease. Others are felt to be very specific, meaning that when they are positive, it is almost certain you have the disease.

Celiac disease (CD) was once considered an extremely rare affliction, limited to individuals of European origin. Today, however, a growing number of studies1 indicate that Celiac disease is found throughout the world at a rate of up to 1 in every 133 persons, which is several orders of magnitude higher than previously estimated.

When Survivor contestant turned talk-show host Elisabeth Hasselbeck went public about her diagnosis of celiac disease and her subsequent gluten-free diet, it did a lot to raise awareness of the disease - one that experts estimate affects one in 100 people.

Just ten years ago if you needed some gluten-free baking supplies or quick lunches, it would be almost impossible to do a cold shop. By cold shop I mean just enter a store without investigating products beforehand. Today you can walk in most quality grocery chains and find both an entire section labeled with gluten-free foods and some fine products made by premium manufacturers explicitly designed and labeled by the manufacturer as gluten-free.

The symptoms of gluten intolerance include ones such as mild stomach pain, unusual weight loss, embarrassing and uncomfortable levels of gas, and sometimes a bit of diarrhea. While we all experience these symptoms occasionally the problem becomes suspicious when they seem to be happening a little bit too frequently for us.
